Starting the trial from inside the app gives you 14 days of full Plus access for free. It's an App Store / Google Play introductory offer, so it runs through your store account and needs a payment method on file — you won't be charged during the trial, and cancelling any time before day 14 costs you nothing. After that it renews at $2.99/month until you cancel.
Absolutely. You can upgrade from Free to Plus at any time. If you cancel Plus, you'll keep access until your billing period ends, then drop back to the free plan. No data is lost when switching.
